Chicken Pesto Pasta Recipe

In the midst of a busy season, I am always on the lookout for a delicious and easy pasta recipe to fill in our weekly menu plan.  This Chicken Pesto Pasta recipe is sure to please a crowd, and of course, your budget!

I am always looking for easier, but it is important for me to also make sure what I cook is something my whole family will eat.  I don’t like having to make more than one entree because the boys don’t like something.  This recipe is a great solution.  It is full of delicious flavors they love and is so super simple for me to make.  Plus, it has extra vegetables which they gladly eat in this dish.

Chicken Pesto Pasta Recipe

Most of these items you probably already have on hand in your pantry.  At least, I keep this in my pantry.  I am a huge pesto fan, but don’t like it super heavy in a dish.  This mixture adds tons of flavor, without feeling overdone.

Ingredients

Instructions

  1. Dice chicken into bite size pieces.
  2. Dice onion.
  3. Cook penne pasta as directed on the package and set aside.
  4. In a large skillet, add olive oil, chicken, onion, and seasoning. Cook on medium heat until chicken is fully done.
  5. Once the chicken is fully cooked, add sun-dried tomatoes and spinach. Mix together well and cook until spinach is wilted.
  6. Reduce heat and toss in pasta, pesto sauce, and cherry pepper topper. Mix well until everything is coated with the pesto and cherry pepper topper.
  7. Add mozzarella cheese and mix together to allow for the cheese to melt.
  8. Serve & enjoy with your family!

Ingredients

  • 1 pound chicken tenders
  • 1/2 medium onion
  • Salt, Pepper, & Garlic (to taste - a little goes a long way)
  • 1/3 Bag Spinach
  • 1/4 cup Sun-Dried Tomatoes (in oil)
  • 3/4 Bag Penne Pasta
  • 2 tablespoons Pesto Sauce
  • 1 tablespoon Cherry Pepper Topper (sold at HEB)
  • 1 cup Shredded Mozzarella Cheese
  • 1 tablespoon Olive Oil
