Easy Instant Pot Garlic Mashed Potatoes Recipe

Easy Instant Pot Garlic Mashed Potatoes Recipe Ingredients

  • 3 pounds russet potatoes, peeled and cut into small chunks
  • 
4-5 large garlic cloves, peeled and smashed
  • 1 tablespoon fresh rosemary leaves, finely minced
  • 1/2 cup chicken or vegetable broth
  • Salt and black pepper, to taste
  • 1/4 cup heavy cream
  • 3 tablespoons unsalted butter, cut into chunks

Easy Instant Pot Garlic Mashed Potatoes Recipe Instructions

  1. Combine potatoes, garlic, rosemary leaves, and broth in Instant Pot.
  2. Season with salt and black pepper, to taste, and stir to combine.
  3. Add lid and lock into place.
  4. Switch the vent to “Sealing” and set the “Manual” setting to 8 minutes.
  5. When cook time is complete, allow pressure to release naturally for 10 minutes, then manually release any remaining pressure.
  6. Carefully remove the lid and add heavy cream. Mash the potatoes with a potato masher or immersion blender until almost smooth, but still slightly chunky. Taste and season with additional salt and black pepper, if desired.
  7. Transfer to a serving bowl and top with butter and serve immediately.

To keep mashed potatoes warm and fluffy, place them over a simmering pot of water on the stove. This keeps them warm without watering them down.

If you want a quick and easy way to warm mashed potatoes, you can warm them in the microwave as well. This does tend to dry them out so you may need to add a little more butter after they are heated to make them fluffy again.

Can you prep potatoes ahead of time for mashed potatoes?

To save time in the kitchen, you can prep potatoes ahead of time by washing, peeling and cutting the potatoes into chunks. This can be done up to two days in advance. To store the potatoes, you want to keep them stored in an airtight container with water in the refrigerator.

When you are ready to use the potatoes for a meal, all you have to do is add them to your Instant Pot or pot on the stove.
