Easy Chipotle Pasta Salad Recipe

Ingredients

  • 1 box Reggano Tri-Colored Rotini Pasta Noodles
  • 10 oz Friendly Farms Sour Cream
  • 3/4 of Stonemill Ranch Salad Dressing Mix
  • 1 tbsp Benita Whole Chipotle Peppers*
  • 1/2 Fresh Jalapeno
  • 1/2 Fresh Bell Pepper
  • 1/2 Fresh Poblano Pepper
  • Handful of Cherry Tomatoes
  • 1/2 Fresh Squash
  • 1/2 Fresh Zucchini
  • 1/2 Fresh Cucumber
  • 1 Fresh Celery Stalk
  • Pinch of Stonemill Essentials Seasoned Salt
  • Pinch of Stonemill Essentials Iodized Table Salt
  • Pinch of Stonemill Ground Black Pepper
  • Pinch of garlic, minced

Instructions

  1. Cook Reggano Tri-Colored Rotini Pasta Noodles as directed on the package. While the noodles are cooking, complete steps 2-5.
  2. Rinse and coarsely dice fresh vegetables, then set aside.
  3. Open the chipotle peppers and place in a vegetable strainer and rinse to remove the Adobo Sauce.
  4. Place Benita Whole Chipotle Peppers in a food processor to puree/blend into a paste.
  5. In a bowl, mix Friendly Farms Sour Cream, Stonemill Essentials Ranch Salad Dressing Mix, puree/paste Benita Chipotle Peppers and seasonings together well. Set aside.
  6. Once the noodles are completely cooked, rinse with cold water to prevent the noodles from sticking together.
  7. In a large mixing bowl, toss pasta noodles and vegetables together.
  8. Add chipotle ranch mixture to the bowl and toss together well until everything is well coated.
