This scrumptious, quick and easy blueberry muffin bread from scratch is so delicious! We made this blueberry muffin loaf and it was devoured in about 5 minutes flat! You must try it yourself!

Blueberry Muffin Bread

  • 1/2 cup butter
  • 1 cup sugar
  • 3 eggs
  • 3 cups pancake mix
  • 1/2 cup milk
  • 1/2 cup blueberries


  1. Preheat oven to 350°.
  2. Beat sugar and butter together until they seem light and fluffy in a mixer.
  3. Add eggs to the mixture one at a time.

  4. Add pancake mix slowly on low until mixed well. Increase speed of mixer as needed.
  5. After the batter is fully mixed as a very thick consistency, reduce the speed of the mixer to low.
  6. Pour milk in slowly and mix until it has a creamy consistency.
  7. Turn mixer off and fold in blueberries.
  8. Pour batter into a bread pan.
  9. Bake for 50-60 minutes.
  10. After muffin bread is done, remove from oven and allow it to sit for approx. 5 minutes.
  11. Serve and enjoy every bite!
