My family and I love this spring salad all year, but it’s the perfect recipe to keep in your fridge all season long. The longer it sits in the fridge, the more flavorful it becomes.

My boys and I usually grab a fork on our way into the kitchen just to take a bite or two of this directly from the bowl. I know…it’s probably not the best idea, but it’s just that good and if it’s just us eating on it, I claim no harm, no foul! :)

Spring Vegetable Salad Recipe

Serves 15-20

Spring Vegetable Salad Recipe Ingredients

  • 15 oz whole kernel corn – drained
  • 15 oz cut green beans – drained
  • 15 oz peas – drained
  • 1½ tbsp pimentos
  • ⅛ cup green bell pepper – diced
  • ⅛ cup red onion – chopped
  • ½ cup sugar
  • ¼ cup apple cider vinegar
  • ¼ cup vegetable oil
  • salt and pepper to taste

  1. Mix all ingredients in a large mixing bowl.
  2. Stir well and serve!

  1. How long can this be stored in ref. I know the longer it is in the marinade the better it is.

    1. When I make this for my family, it usually only lasts a few days before it is completely gone. My boys love snacking on it and before you know it…they have eaten the entire container!
