Ingredients

  • 1 pound ground beef
  • 1/2 medium red onion (diced)
  • 1/2 medium poblano pepper (diced)
  • 1/2 medium jalapeno (seeded & diced)
  • 1/2 cup frozen corn
  • 1/2 can (15 oz) black beans
  • 1 enchilada sauce powder mix
  • 1/2 – 1 cup shredded cheese
  • 1/2 can (15 oz) enchilada sauce

How to Make The Southwest Beef Enchilada Recipe

  1. Prepare veggies (onion, jalapeno, and poblano pepper)and set them aside.
  2. Brown hamburger meat.
  3. Add in veggies and cook for an additional 4-5 minutes or until they are tender.
  4. Mix in the corn, black beans, and the packet of enchilada seasoning.
  5. Mix all ingredients, and scoop into flour tortillas.
  6. Roll tortillas and line in the bottom of the prepared (spray with non-stick spray) casserole dish. Top with canned enchilada sauce, any excess filling, and shredded cheese.
  7. Bake at 350 degrees for 15 minutes or until cheese is melted and bubbling.
